The Pollo Chuco (which has nothing of chuco) as this dish is known, has its appeal as breaded chicken for the accompaniments that brings: banana slices, salad and Chimol plus a sauce that makes this traditional dish a rich national food.

  • 1 pound Chicken main ingredient
  • 1 cup all-purpose flour
  • 1 cup bread crumbs
  • 2 eggs
  • 3 cups vegetable oil for frying
  • 2 plantains or minimal greens
  • 2 tomatoes
  • 1 green chile or bell bell pepper (sweet chile)
  • ½ white or yellow onion
  • ½ cup milk
  • 4 cabbage leaves
  • 5 garlic cloves
  • Tajín
  • Apple cider vinegar
  • Cilantro
  • Mustard sauce
  • Mayonnaise
  • Tomato sauce
  • Honey
  • Cumin to taste
  • Dried and ground rosemary to taste
  • Oregano to taste
  • Paprika to taste
  • Garlic salt
  • Lemon juice or juice of lemon
  • Sea salt to taste


Marinating the Chicken

  1. To clean the chicken we first leave it for 20 minutes with lemon and salt, to eliminate any harmful bacteria.
  2. Then wash it with drinking water and let it drain.
  3. Cut the chicken into the pieces we want to serve and place it in a glass bowl.
  4. Add 3 tablespoons of mustard, 5 crushed garlic cloves, 1 tablespoon of lemon juice and 1 teaspoon of sea salt.
  5. Note: Remember that lemon tends to cook chicken meat.
  6. Let stand for 3 to 4 hours (the longer the better).

Preparation of the Sauce

  1. In a bowl add the milk as a base.
  2. Add 3 tablespoons of tomato sauce, 2 tablespoons of mayonnaise and a tablespoon of mustard.
  3. Mix with ½ teaspoon oregano and ½ teaspoon rosemary.
  4. Add a little lemon juice.
  5. Finally, add a spoonful of honey.
  6. Check the flavor
  7. Tip: better if it is not too salty
  8. Beat well and ready,
  9. Keep in the refrigerator while preparing the rest.

Preparation of the Chimol

  1. Wash the cilantro, tomatoes, green chile (Pigmenton), carrots and cabbage with water, vinegar and baking soda.
  2. Cut the tomatoes, sweet chili and onion in small squares.
  3. Mix everything together in a glass or plastic container.
  4. Add 1 tablespoon of vinegar, 1 tablespoon of lemon, 1 teaspoon of oregano, 1 teaspoon of cumin and 2 teaspoons of salt.
  5. Tip: If you have olive oil, we recommend adding 1 or 2 tablespoons.
  6. Stir well and let stand half an hour before serving.

Salad Preparation

  1. Finely julienne the cabbage and carrots, previously washed.
  2. Chop the cilantro.
  3. Stir everything together in a large bowl.
  4. Add 1 tablespoon of apple cider vinegar, 1 tablespoon of lemon, 1 teaspoon of cumin, 1 teaspoon of pepper and salt to taste.
  5. Stir the ingredients well and let them absorb all the flavor.
  6. Reserve in the refrigerator.

Preparation of the Chicken

  1. Heat the oil in a frying pan.
  2. Tip: A high pan will do
  3. In a bowl place the flour with a mixture of rosemary, garlic salt and oregano.
  4. Tip: You can add the spices in teaspoons to find your point.
  5. In the second bowl, beat the two eggs well.
  6. In the third one we mix the crumbs with the tajín.
  7. Tip: If you have any combination that includes spicy chili add it to this part.
  8. Fry until golden brown. Approximately 5 to 10 minutes depending on the size of the chicken pieces.

Preparation of the plantains

  1. Peel the green plantains and cut into slices.
  2. Add a little sea salt
  3. Fry the slices and drain the oil.
