Chilaquiles with Ground beef


Chilaquiles are a traditional dish of Mexican cuisine, prepared with cut tortillas, fried or toasted and cooked in a spicy sauce, either red or green, depending on the type of chile used. This delicious dish has many regional variations.

In addition to tortillas, it can include a variety of ingredients such as shredded chicken, beef, arrachera, beef enchilada, cecina, chorizo, eggs to taste, quesillo, among others. It is usually seasoned with cilantro or epazote and is typically accompanied with a portion of beans.

Chilaquiles are easy to prepare and enjoy great popularity in Mexico, although they are quite caloric. They are considered a traditional Mexican breakfast, but are also commonly eaten at other meals of the day.

Recipe for Chilaquiles with Ground Beef

Utensils

Ingredients

  • ½ pound ground beef
  • 10 corn tortillas
  • 5 cabbage leaves
  • 1 carrot
  • 4 cilantro sprigs
  • ½ cup tomato paste
  • 1 tablespoon mustard
  • 2 tablespoons sour orange
  • Olive oil
  • Oil for frying
  • 1 tablespoon honey
  • 1 teaspoon salt
  • ½ cup water
  • 1 teaspoon of dried basil leaves
  • 1 teaspoon cumin
  • 1 teaspoon ginger
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon chipotle chili bell pepper

Preparation

Prepare the Salad

  1. Roll and chop the cabbage leaves.
  2. Grate the carrots
  3. Chop the cilantro sprigs
  4. Add everything in a bowl and mix
  5. Season with 1 tablespoon cumin, 1 tablespoon oregano, 1 tablespoon black pepper and 1 ½ tablespoon salt.
  6. Add the juice of one lemon and 2 tablespoons of organic apple cider vinegar.
  7. Mix again
  8. Add 2 tablespoons of olive oil.
  9. Mix well and reserve in the refrigerator.

Prepare the meat

  1. In a cup or bowl combine 1 teaspoon powder of each of these spices: Basil, Cumin, Ginger, Black Pepper, Oregano, Thyme and Chipotle chili.
  2. Heat the olive oil in a saucepan over medium heat.
  3. Add half a chopped onion and sauté for 1 minute.
  4. Chop 5 cloves of garlic and add them to the pot. Sauté for 1 minute more
  5. Add the combination of spices and mix. This will activate the flavor of the spices
  6. Add the ground beef to the pot and sauté well, while stirring.
  7. Then add the 4 tablespoons of tomato paste, 1 tablespoon of mustard and 3 tablespoons of sour orange.
  8. Add half a cup of water
  9. Mix well and bring to a boil and boil for 4 minutes. Stir from time to time so that the meat does not stick to the pot.
  10. Add a spoonful of honey.
  11. Let it boil for 1 more minute so that the flavors combine well.
  12. Remove and set aside.

Prepare the tortillas

  1. In a high pan, heat the oil over high heat to fry the tortillas.
  2. Cut the tortillas into strips or any other shape you like.
  3. Fry the tortilla strips until they are toasted but not burnt. Approximately 3 to 5 minutes
  4. Remove and drain the tortilla strips and put them on paper towels to drain all the oil.

Preparation of the Chilaquiles

  1. First place the tortilla strips on a wide plate.
  2. Then add the ground beef that we have prepared on top
  3. And finally place the salad
  4. Note: We can apply a vinaigrette or sauce of our taste.
  5. Enjoy
